Asian inspired pulled pork sandwich loaded with fresh herbs and love

Ingredients
  • 2 lbs cooked pulled pork
  • 1 15 oz can coconut milk
  • 2 teaspoons fish sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon minced fresh ginger
  • 2 teaspoons garlic powder
  • 1 coarsely chopped white or yellow onion
  • 1 thinly sliced red onion
  • 1 handful chopped cilantro (about ⅔ cup)
  • 1 thinly sliced cucumber
  • ¼ cup sliced Thai basil (1/2 in strips)
  • 1 cup daikon, cut in matchsticks
  • 1 medium carrot, cut in matchsticks
  • 2 teaspoons kosher salt
  • 2 teaspoons granulated sugar
  • Mayo to taste
  • Sriracha to taste
  • Baguette or Rhodes Dinner Rolls
Instructions
  1. Let Rhodes rolls rise as directed on the package if using.
  2. Add cut white onion to a hot pan and allow to lightly char.
  3. Next add curry paste, fish sauce, coconut milk, garlic powder, ginger and stir to combine. Bring to a boil.
  4. Add the cooked pulled pork. Allow to simmer until heated through.
  5. While the pork warms up, prepare the quick pickles. Add one teaspoon of the salt to the daikon and carrots. Massage and squeeze out as much of the juices as you can (about ¼ total volume). Add remaining salt and sugar and stir to incorporate.
  6. Prepare the sandwiches by adding mayo to the top of the roll. Top with remaining ingredients. Grab a napkin and enjoy!
Notes
I used only 1 Tablespoon of red curry paste because I wanted the kids to eat it. I could have used two they would have been fine and they even asked for a bit of Sriracha.
