For Strawberry Ice Cream Day we decided to make ice cream sandwiches. I could only manage one of these rich cookies, so I didn’t have mine as a sandwich. But I didn’t hear anyone else complain and we had fun making them!
Chocolate Wafer Cookies
SERVES 9
1/2 cup vegetable shortening
1 1/4 cup light brown sugar
1/2 teaspoon baking powder
3/4 teaspoon salt
1/2 cup cocoa powder, sifted
1/2 teaspoon vanilla extract
2 cups all-purpose flour
INSTRUCTIONS
Preheat oven to 350 degrees F.
In a large mixing bowl, beat brown sugar and shortening. In a separate bowl combine baking powder, salt, and cocoa powder. Mix into the sugar mixture. Incorporate the vanilla.
Gradually add in the flour and 4-6 tablespoons of water in the bowl of a stand mixer, alternating flour and water until dough comes together.
On a lightly floured surface, roll out batches of the dough to about 1/4 inch thickness.
Use a knife or cookie cutters to cut into squares or shapes, re-rolling as needed to make 18 cookies.
Bake on greased cookie sheets for 7-8 minutes. Allow to cool on sheet a couple of minutes then move to a baking rack to cool completely.
To make into sandwiches spread slightly softened ice cream on the backside of one cookie and top with a matching shape. Chill in the freezer until it is time to enjoy!
