I’ll be honest, this was Plan B. I was supposed to make my Chicken Hurry Curry tonight, but had forgotten the plain yogurt on the last grocery run. I think this was a hit around here. We’ve got some pretty big peanut butter fans. This one goes together pretty easily. My 7 year old (almost 8) pretty much made it himself – except for browning the chicken in the oil. And I must not forget the 3 year old who was in charge of the mint and cilantro tearing! Yay, for the encouragement of Jr Master Chef!
Chicken Peanut Curry for Chicken Curry Day

Family favorites peanut butter and chicken combine for a tasty alternative to what's for dinner.
Ingredients
- 1 2.5lb package boneless/skinless chicken breast pieces, thawed
- ⅔ cup flour
- 4 Tbsp curry powder
- 2 teaspoons Kosher salt
- ½ teaspoon freshly ground black pepper
- ⅓ cup olive oil
- 2 Tbsp fresh ginger, minced
- 6 garlic cloves, minced
- 4 cups chicken broth
- ⅔ cup peanut butter
- 1 teaspoon ground cumin
- 7 green onions thinly sliced
- ⅓ cup each finely chopped mint and cilantro
- salt and pepper to taste
- 2 cups brown rice
- 2 cups chicken broth
- 2 cups water
- 2 tablespoons coconut oil
- 1 teaspoon salt
- roasted salted peanuts (optional)
Instructions
- In a large pot heat 2 cups chicken broth and 2 cups water to a boil.
- In a separate pot, heat the olive oil.
- Combine flour, curry, salt and pepper in a large bowl. Toss chicken pieces in the flour mixture until coated.
- Add rice to the boiling water/broth and cook as the package recommends.
- Add to the heated oil in batches. Brown the chicken pieces a couple minutes on each side. Remove to a separate dish.
- Add ginger and garlic to the pot. Give that about a minute then add about a cup of the broth to the pot to work off the browned bits. Once most of the bits have been loosened, add the peanut butter and stir. Work in the rest of the broth. Then add the chicken back in. Simmer until the rice is done or at least 18 min (making sure the chicken is cooked thoroughly.
- Stir coconut oil and 1 teaspoon of salt into the rice.
- Stir in the cumin. Serve the chicken curry mixture over the rice with the mint, cilantro, onions and peanuts.
