We are celebrating National Oatmeal Day (October 29) a day late with the Best Granola Ever. This recipe makes a large batch, and it lasts in a sealed container for quite a while. It is adapted from a recipe that uses maple syrup instead of the honey and vegetable or canola oil in place of the coconut oil. So if you want to experience the second best granola ever, or if you are out of the preferred ingredients, you can make the substitution. You can experiment with your favorite dried fruits too.
Also, it makes your house smell heavenly. Great for cool fall days. Enjoy!

A delicious high fiber treat that's great on yogurt, with milk or however you enjoy your granola.
Ingredients
- 7 cups old-fashioned rolled oats
- 1 cup flaked coconut
- 1 cup wheat germ
- 1 cup almonds, sliced or broken up
- 1 cup pecans or walnuts, chopped or broken up
- 1 cup sunflower seeds, raw or toasted
- ½ tsp. salt
- 1 cup honey
- ¾ cup coconut oil
- 1 tablespoon vanilla extract
- 1 cup golden raisins
- 1 cup dried cranberries
- 1 cup chopped dried apricots
Instructions
- In a large bowl, combine oats, coconut, wheat germ, nuts, and sunflower seeds.
- In a separate bowl combine the salt, honey, oil, and vanilla, and stir to somewhat combine.
- Add the oil mixture to the dry mixture.
- Spread on two rimmed baking sheets lined with foil.
- Roast in a 250F oven for 2 hours.
- Return granola to your large bowl and add the dried fruit.
Notes
We like to add orange oil to our cranberries. We just add about ½ teaspoon to our craisins. It gives another depth of flavor to the granola.
