Empanada Day

Empanadas, also known as hand pies or turnovers, are super versatile.  They can be filled with meats, cheese, potatoes and other savory ingredients.  Or you can fill them with sweets like cherries or apples and top them with cinnamon sugar and whipped cream!  They can be a great way to use up leftovers.  You can bake or fry them.  They are also good for making in large batches and freezing for a quick easy meal down the road!

You can pick up empanada discs from your local latin grocery store, but homemade is quite easy and fresher is almost always better.
