This holiday celebrates a piece of American history. Today is the anniversary of that day in 1848 when James Marshall, foreman of the lumber mill being built for John Sutter, found a shiny metal in the ground near the meeting of the American and Sacramento rivers in Northern California. The men tried to keep it quiet but word quickly spread of ‘gold in them thar hills.’
For tonight’s celebration, by cracky, we’re fixin’ to have this here coconut ‘varmint’ chicken made with nugget sized chicken bites, gold nugget corn and some Yukon Gold mashed taters.
We’re going to pop in Toy Story 2 – it’s the one with the Stinky Pete the Prospector.

PROSPECTOR’S GOLD NUGGET CHICKEN

Makes: 4 servings
INGREDIENTS
2/3 c. Bisquick
2/3 c. flaked coconut
1/2 tsp. paprika
1/2 tsp. salt
1/2 c. sweetened condensed milk
2 tbsp. Dijon style mustard
4 boneless, skinless chicken breast halves
1/4 c. butter, melted
INSTRUCTIONS
- Heat oven to 375 degrees. Mix Bisquick, coconut, paprika, and salt; set aside. Mix milk and mustard.
- Dip chicken in milk mixture; coat with coconut mixture. Place in ungreased rectangular pan and drizzle with butter. Bake 35-40 minutes.
